O coromandel ou espinafre-da-índia é uma ornamental comestível muuuuito gostosa. E não são só as flores – as folhas cozidas são uma delícia.
Não é sempre que eu acho uma planta saborosa. Tem plantas que eu acho simplesmente ok, um sabor nada de mais, como a beldroega, ora-pro-nobis e a trapoeraba. O coromandel não, ele tem um sabor só dele. Levemente amendoado, algo de cogumelo. Muito gostoso especialmente em sopas, no omelete ou recheio de tortas. Aparentemente pode ser consumido cru, mas a recomendação é cozinhar.
Para colher, prefira as folhas dos ponteiros, mais jovens, antes de a planta dar flor. Para ter folhas jovens, uma poda de 30-50% da planta estimula a brotação intensa. As folhas mais velhas são comestíveis, mas são mais fibrosas.
Ela é fácil de identificar porque geralmente vende em floricultura e gardens, então alguém já fez esse trabalho de identificação por você 😂. É uma planta alastrante, prostrada, de em média 40cm de altura. Aqui na minha região ela não é espontânea, mas imagino ela virando um problema ambiental em regiões úmidas e quentes – qualquer galho dela enraíza. Na Amazônia ela deve ser perigosa – se puderem, jamais levem essa planta para lá. Ela gosta de climas quentes e úmidos.
Nutricionalmente, as folhas do coromandel são fonte de fósforo, zinco, cálcio, ricas em fibras, proteínas e vitamina A.

Forma de uso: folhas cozidas, flores cruas ou cozidas
Cultivo: sol pleno ou sombra parcial, solos férteis, bem irrigados. Não tolera vento.
Ah, pelas fotos você deve ter notado que a cor e tamanho das flores varia bastante de acordo com a variedade. O formato das folhas também varia, incluindo a espécie de folhas marmorizadas (variegata). As variedades mais comuns no Brasil são de flores brancas, rosadas, lilases ou arroxeadas.
